I love spanakopita. I make it at least once a month.
Two friends have birthdays this week, so I made cupcakes, using the delicious Pillsbury pumpkin bread mix. I looked in the cabinet and found no frosting so I made some.
What to do with leftover matzoh:
I made a simple vegetarian beet soup with matzoh balls for my first Pesach meal.
